Tomato-Olive Appetizers

This is a recipe that we reverse-engineered for our Super Bowl Party at Paul’s.  It was served to us at Bohemian Cafe on Friday night as an appetizer, and we decided that we could re-create it. We were served this with bruschetta, which was wonderful.

The Stuff:

  • 2 cups cherry tomatoes
  • 2 cups pitted calamato olives
  • 2 cups feta cheese
  • 3 tablespoons balsamic vinegar (or more, to taste
  • several leaves of basil

The Delivery System, version 1.0:

Cut tomatoes and olives into halves and mix. crumble in fetta.  Roll the basil and cut into strips and add to the mixture.  Mix in the balsamic vinegar, cover, and set aside to meld the flavors.

Brush several slices of French Bread with olive oil and toast.  Serve with the mixture.

While this is very tasty, and works well for an intimate dinner, it is totally inappropriate for a party.  Especially one where a white carpet is involved.  Therefore, some modification was necessary.

The Delivery System, version 2.0:

Prepare the mixture as above.  However, cut the tomatoes and olives into smaller pieces.  Fill preformed phyllo dough cups with the mixture.  This makes a much more stable delivery system than the bruschetta, and is better suited where plates and napkins may not be close by.

Variation – substitute small chunks of fresh mozzarella for the feta cheese.
