We had grabbed Glynda and taken a quick trip down to Park Seed in Greenwood this afternoon for a sale they were having on herbs. After smelling the aroma of herbs all afternoon, we decided we needed to take it a bit further for dinner. Once again, we decided to reverse engineer a meal had at a restaurant. We had to depend on Glynda for this one.
First, you’ll need one of those hoity-toity high-end grocery stores to find the ingredients. In this case, it was Whole Foods. Here’s when you need…
- 1 cup sundried tomatoes in olive oil (usually found on olive bars)
- Turkey bacon
- Fresh mozerella (buffalo, if available, but cows will do)
- Several Fresh Basil Leaves (substituted for lettuce)
- Sandwich Rolls (in our case, rosemary rolls)
Take some of the olive oil from the tomatoes and lightly spread over the bread. Place slices of the tomato on the bread, enough to cover. Add thin slices of the mozerella and basil, then enjoy.
